Red Lentil and Sweet Potato Croquettes...
or a meatball-sized main course... or meatless burgers...
A recipe using blueberries, peaches or corn is probably what you’d expect in high summer. However, some of you have been impatient to get the recipe for the lentil and sweet potato croquettes I posted on Instagram not long ago, so I thought I’d better oblige.
What I adore about this dish — in addition to the fact that it’s vegetarian but so delicious that even the meat eaters want it — is what a great base it makes to play around with. I’ve used Mediterranean flavours here, but one glance at the recipe below and you’ll immediately see how easy it would be to switch those up to create, say, an Asian, Indian, or Middle Eastern variation. You could also try a version with brown lentils, or instead of bread you could grind up the same weight in rolled oats, and so on.
