I’m thrilled to be nudging Peter to the forefront this week to share a recipe that could be a life-changer for anyone of the gluten-free persuasion – or, indeed, for anyone who cooks for people who avoid gluten. Ever since Peter found himself in the former category four or five years ago, he’s been working to adapt. For the most part, he’s learned not to miss gluten, but, let’s be honest, sometimes you do crave a nice piece of toast, or to be taken out for tea and cucumber sandwiches. Peter has spent the past year honing his sandwich bread recipe. What started out as an overly fluffy and delicate loaf that was tricky to handle has developed into a flavourful white bread with proper structure, that slices beautifully, and is ideal for everything from breakfast toast to tea sandwiches, grilled sandwiches, and even canapé bases. The gluten-free breads found at the grocery store are incredibly expensive, chewy and not very versatile.
