Our flight was late, which meant we didn’t get home until 2:30 in the morning, so we woke late the next day, and to an empty fridge, which is not ideal when you’re expecting the whole family for an early supper. Usually, I spend a bit of time figuring out a menu, but that day I had none to spare, which is how this dinner came about. It’s a bit of a curation job, really, using recipes that have come my way and been kept in constant use because they’re so reliable. The other thing I like about them is that they are vegetarian and gluten-free, which makes this menu one that our whole family can share without my having to make extra dishes to get around restrictions. The ingredients are easy to find, so that takes no time, and the recipes are simple. It’s not a fancy menu, but everything is delicious, colourful, and satisfying. Perfect for a cozy evening at home with family or close friends.
